
Yoshida Sake Brewery - Gassan Junmai Daiginjo
Established in 1743, Yoshida Sake Brewery is located in Yasugi City in Shimane Prefecture. Shimane is considered the birthplace of sake from its extensive history dating back to ancient times. Shimane sake is a reflection of proud traditions passed on from generation to generation. During the Warring States Period (1396-1566), the best sake of each year was presented to the Lord of the Toda Castle. This sake was known as ‘Gassan’. Aiming to produce only the best quality sake, the quality they would be proud to present to a Lord, Yoshida Sake Brewery has named their sake ‘Gassan’.
The water that Yoshida Sake Brewery uses is the softest water in Japan. It is also recognized as one of the 100 best waters in Japan. The brewery is dedicated to using the softest local water to respect the deep history of the region and bring out the complex aromas and tastes of the sake. Using the top quality rice in the Hirose region, a significant portion of the rice is polished away to ensure the purest tasting sake.
This sake has a rich umami flavor and aroma, with a clear flavor. It is a well-balanced and harmoniously made product. (Junmai daiginjo: Special brew sake made from only water, koji, and rice with a polishing ratio of 50% or less, fermented at low temperature.)
