Corvina
Though quiet Corvina isn’t a household name, the wines created from it most certainly are. This Italian red wine grape is a key constituent of Valpolicella wines (along with Rondinella), and is a major player in the air-dried appassimento grapes of Amarone, thanks to its thick skins. Widely planted in Italy's northeastern corner, its high level of acidity and distinctive herbal, cherry notes are essential to many blends.
