Champagne Roses de Jeanne - VV/R22 Brut Blanc de Noirs

This cuvée is entirely Pinot Noir sourced from the 1.49ha parcel of Val Vilaine in the neighbouring commune of Polisy. Originally planted in 1974 by Cedric’s father, the vines are 40+ years and grow on bands of Kimmeridgian soils commonly found in Chablis. Only the first press juice used, crushed by foot, fermented in tank with indigenous yeasts. Maturation is on lees for 16 months, and this is disgorged with 0 dosage. 

Beauty structure and presence, with a rimrod limestone backbone basing white cherry, lemon, dried crushed flowers, with a subtle effervescence streaming this to a chalky finish. A stunner.
