A beautifully imperfect sake from Chiba, made with organic rice barely polished. Full of life, energy and flavour, the bottles will evolve and continue to surprise you even after they've been opened for days and weeks. The brewery propagates its own koji spores, an extremely rare decision and works within low interventionist principles.
