From the beginning, Catherine and Didier sought to bring their domaine in a direction that was very different from the norms of the appellation at the time: allow the singularity of each terroir express itself through a dedicated cuvée. All this was being done by producing mostly still wines (80%) where sparkling wines were (and are still) the main types of wine produced in the appellation (75%).

Unlike most other growers, Catherine and Didier bottle their whole production. Again, going against the grain, Champalou has always practised a viticulture that is sustainable and shows respect for the land. This is shown in a myriad of ways: vines are pruned short, disbudded, and their leaves are thinned. Additionally, during the Summer, the grapevines are powdered with talc and lime, all of these actions serve to control humidity and thereby avoid mould and diseases. Lots of work with minimal inputs.

Grapes are carefully monitored so that picking takes place at the right time in the individual terroirs. Accordingly, the grapes are pressed once or twice gently, followed by natural fermentation at low temperature. Tibouren is a very fine, thin-skinned grape which requires a lot of ventilation to be successful and needs to grow close to the ocean, with lots of ventilation to be successful and avoid issues with rot. Today, the estate represents 30 hectares, all in the commune of Caudiès-de-Fenouillèdes. Merlot, Cabernet Sauvignon, Cabernet Franc, Grenache, Syrah, Cenanson, Macabeu, Rolle, and Chardonnay are also planted.

To this day, the vast majority of Côtes du Roussillon AOC is being mass produced by cave cooperatives. In the early 1990s, the indifferent wine made by the cooperatives made it hard to make a living from viticulture, resulting in the majority of the vines getting ripped out. Those entering the business were pressed by the cooperatives to plant Merlot, Cabernet Sauvignon, and Cabernet Franc in order to make Bordeaux-style wines. While initially successful, this strategy failed. Because he couldn’t make it selling his grapes, Alain tried his hand at making wine with his small estate but after inheriting his fathers vineyards, he found it hard to sell the large volumes. An offer to work with a supermarket to produce wine to specification ended up not being profitable either, with the detriment of being forced to produced wines with no character.

A chance encounter with Tom Lubbe of Domaine Matassa would change everything. Tom also showed Alain the importance of highlighting different terroirs, a lesson that has produced great results. Alain, completely reinvigorated, is grateful to have had this second chance. The process is extremely natural and the very long fermentations make it possible to sustainably nourish and stabilize the wines by using very low doses of sulphur.

Pascal Jolivet‘s Sancerre is a blend of wines from various soils: 50% limestone, 30% clay-limestone, and 20% flint. The diverse soil formations characterize the mineral and at the same time very fragrant, elegant character of the wines of Pascal Jolivet. Domaine Pascal Jolivet is one of the youngest and most dynamic wineries in the Loire Valley. The eight-hectare Pascal Jolivet estate was created in 1987, in the communes of Tracy and Les Loges. Today, Pascal Jolivet’s total holdings cover over 120 hectares of vines between Sancerre and Pouilly Fumé,which are now farmed organically, and 60 hectares in Tourine for Attitude, with an additional 20% of purchased grapes for this line.

Over the years, Pascal Jolivet has developed a real style for his wines, very identifiable by its purity and elegance. The idea is to follow a process of “organic vinification”: after a very light settling, the fermentation of the juices is carried out with indigenous yeasts, and the aging on the lees plays a fundamental role in the concentration and complexity of our wines.

The grapes are hand sorted and lightly pressed in a gravity system. The wine from each plot is vinified separately before blending. As befits an excellent white wine, it can be aged for up to 10 years.

Since 2001, Pascal Jolivet has engaged with a particular terroir for his line Attitude. Brun is the owner and winemaker at this 60+ hectare family estate that has attracted the attention of the French and American press for the wonderfully fruity and delicate wines he produces.

Brun wants to make “old-style” Beaujolais and his vinification differs from the prevailing practices in the region. He believes that the charm of Gamay’s fruit is best expressed by the grapes’ indigenous yeasts, rather than by adding industrial yeast.

Brun’s view is that Beaujolais drinks best at a lower degree of alcohol and that there is no need to systematically add sugar to the must to reach alcohol levels of 12 to 13 degrees. His Beaujolais is made to be pleasurable–light, fruity and delicious–not an artificially inflated wine that shines at tasting competitions.

Only a minimal amount of sulfur is used at bottling to keep the wine fresh and “headache-free”. Fermentation naturally produces a lot of CO2 , which acts as protection against oxidation during aging; leaving some in the wine at bottling time also helps to keep it fresh. Filtration is also minimal so that the wine keeps its original fruit and aromas. Brun’s wines are not ‘blockbusters’ in the sense of ‘big.’ The emphasis is not on weight, but on fruit: Beaujolais as it once was and as it should be.
